Recipe from Amy Gorin’s blog.
- 1/4 cup unsweetened coconut milk
- 1/4 cup unsweetened vanilla coconut milk yogurt
- 1 tsp. vanilla extract
- 1/2 frozen banana
- 1 1/2 peeled seedless mandarin orange, divided*
- ice, as desired
- 2 Tbsp. pistachios
- 2 Tbsp. dried shredded coconut
- 2 Tbsp. chia seeds
*Note: I used Wonderful Halos mandarin oranges.
Blend coconut milk, yogurt, vanilla, banana, 1 orange, and ice as desired. Pour into bowl, and top with remaining orange wedges, pistachios, coconut, and chia seeds.
