Breakfast - Vegan Mandarin Orange Creamy Coconut Smoothie Recipe

INGREDIENTS

  • 1/4 cup unsweetened coconut milk
  • 1/4 cup unsweetened vanilla coconut milk yogurt
  • 1 tsp. vanilla extract
  • 1/2 frozen banana
  • 1 1/2 peeled seedless mandarin orange, divided*
  • ice, as desired
  • 2 Tbsp. pistachios
  • 2 Tbsp. dried shredded coconut
  • 2 Tbsp. chia seeds

*Note: I used Wonderful Halos mandarin oranges.

 

INSTRUCTION

Blend coconut milk, yogurt, vanilla, banana, 1 orange, and ice as desired. Pour into bowl, and top with remaining orange wedges, pistachios, coconut, and chia seeds.
